It doesn't need to be complicated. Simply weigh the raw joint and calculate the cooking time to ensure the meat is cooked to your liking. Delicious with my red cabbage and apple!
Try baking whole bulbs of garlic while the oven is on - they only take around 30 mins or so. The cloves become soft and delicious - a delight with any roast!
Medium - 30mins per 450-500g / 1lb + 30mins. Roast to internal temp of approx 75-80oC
Well Done - 35mins per 450-500g /1lb +35mins. Roast to internal temp of approx 80-85oC
Before cooking, cut deep slashes through the fat, right down to the meat, dry with a paper towel and then sprinkle with salt. This will help you get some really crisp crackling.
When making the gravy, try adding a little natural apple juice to it for a slightly sweet, fruity flavour which really goes well with pork.
Don't forget the Yorkshires. Fill with apple sauce and serve alongside the meat, they will be a huge hit with everyone!
